In 1952, Leroy Smith, President of Grand Canyon College asked Clara Burghout to become the Manager of Food Services. Her first meals were prepared in her own home and delivered to the students as the cafeteria was still under construction. Many times with donated food, equipment, and on a limited budget she used her talents to the fullest to create delicious and nutritious food for all who ate in the cafeteria. She served banquets and picnics to the students. The visiting athletic teams always commented on the delicious food and the gracious manner in which it was served. Her day began at 5:30 a.m. and ended at 8:00 p.m.
Upon her retirement at the age of 68 in 1970, she continued showing her love for Grand Canyon College by her support financially even though on a very limited income. This was her positive expression of her faith in the future of Grand Canyon University and its students.
In 1989, family and friends established the Clara Burghout Memorial Scholarship in her honor.
